The Directors at Bel Air continually taste the wood during the aging process in their yard to determine not only the structural category it belongs to, but also the ideal seasoning time, which changes each year depending on the weather.

Tonnellerie Billon

Billon barrels enhance the fruit on the nose and palate, whilst adding a background oak lift, and lengthening the palate.

Damy's unique low toasting technique contributes to their signature style of sweetness, roundness and mid palate weight.

European Coopers Hungarian

Hungarian oak is a softer style with more spice notes. Oak from the Tokay forest offers elegance and a fine tannin profile.
